1 Cup White Quinoa

1 Tbsp Olive Oil

1 Sweet Potato, peeled and grated

4 Rashes Short cut Bacon

4 Eggs

1 Onion, Sliced

Salt

Pepper

To Serve

Half handful of fresh Coriander

Tahini

Method:

  1. Add quinoa and 2 cups of water to a medium saucepan. Cover and bring to a boil on high heat, turn to low and allow to simmer for 12-15 minutes or until quinoa is light and fluffy, set aside
  2. In a frypan on medium-high heat add the oil and cook the sweet potato until slightly golden (you may need to do this in batches), season with a pinch of salt and pepper and set aside
  3. In a medium saucepan, bring water to a boil and carefully place in the eggs and cook for exactly 6 minutes. Remove eggs and place in ice cold bowl of water. set aside
  4. In the same pan cook the bacon until crispy (2-3 minutes one side, 1 minute on the other), remove and then caramelize the onion for 3-4 minutes.
  5. To serve combine the quinoa, sweet potato, onion with a pinch of salt, pepper and half the fresh coriander. Transfer a portion to a bowl, peele the eggs and serve with bacon and tahini sauce
