One of the most excitable party foods! Hummus has been making a comeback over the past couple of years with the arrival of Middle Eastern trends into our Western culture. It can be seen in a stand alone dip, as the base of a dish, used throughout the sauce or even just spooned on top to finish. In this blog I show you how you can make your own hummus.

But something special comes from this recipe. My good friend Harry has arrived in NYC on a holiday with his girlfriend Jess and is planning to propose. He has asked me to help out in preparing the location. (more on that by clicking here…). Naturally, I was honored and started planning straight away. One of the first things I asked him was the kind of food Jess likes. As soon as he said cheese and meat boards I finished with the question of, ‘hummus?’ He said that was a no brainer, better yet she liked it with extra garlic.

Now to those who don’t know, hummus already contains garlic, but to get a garlic hummus, you add even more. If you wanted it to be a little more subtle in strong flavor and also sweeter you can roast the garlic wrapped in foil in a moderate oven. After making the proposal space clean and colorful, I blitzed the garlic hummus and set it out with roses, sprinkled some petals and made sure the champagne was chilled.

Ingredients:

3 Tbsp Cobram Estate Extra Virgin Olive Oil

2 Garlic cloves, finely chopped

1/4 Cup Red Wine Vinegar

2 Tbsp Tahini

1 can Chickpeas, drained

Pinch of Salt

Method:

  1. First add oil to a Vitamix or blender followed by the rest of the ingredients,
  2. Blitz until smooth and creamy.
  3. Turn out into a serving bowl or store for a later use
