There is definitely a way of always looking at things half full and the success to which actions are performed…

How often do we head into a challenge fearing the unknown, the performance, failure or the result? What if we looked it at from the perspective of education and exciting vibes? This week i want to raise the thought… Look at this weeks challenges in light of an opportunity 🙂

This week we said goodbye to a very influential figure… Muhammad Ali… the confidence he conveyed and performed with was a shining light to many… Also known as “The Greatist” Ali stood for so much that many believed they never could. He fought against the government, he fought for his rights and he fought George Foreman… and that in itself is pretty hectic…

We all have challenges and they start from the moment even before we open our eyes in the morning, but its your ability to perceive them as an opportunity, not a road block that can be the key to continuing on our epic journey…

He is definitely “The Greatest”.. Ali wasn’t perfection he had 5 losses, however the attitude he took to every obstacle was phenomenal… it wasn’t his boxing prowess that people will remember him for but his determination to stand up for what he thought was right

Now naturally i am going to bring this back to tastiness and i did a bit of research to find out what it is that Ali loved to devour… turns out the man loved his spinach, green beans and baked chicken… so in light of the memory of Ali, that does not need a dish to keep his legacy (as he created a legacy through positive challenges), i decided to recreate a meal and call it “The Greatist…”

In his memory- The flavors will dance around you, taunt you, give you a right hook of flavor to your palette and will forever live inside that tasty bank of yours…

“The Greatist”

Ingredients (Serves 2)

1 Cup red rice
2 tsp cajun spices
1 Tbsp Olive Oil
2 Packed Cups of Spinach
1/2 cup fresh mint
1/2 cup Coconut milk
pinch of salt
Juice of half a lemon
2 Tbsp Tahini
2 eggs

1/2 Avocado (optional)

Method:

1. Add rice to a pot of with 1 cups of water and cajun spices on high heat, bring to a boil, turn to low and allow rice to simmer for 10-12 minutes
2. Add oil to a pan on medium heat and sauce the mint and the spinach until wilted (1-2 minutes)
3. Spoon spinach mix into a blender with the coconut milk, salt and lemon juice, blitz until smooth
4. Bring a small pot of water to a boil, carefully add your eggs and set your timer for 6 minutes. Remove eggs and transfer to a bowl of iced water. Carefully peel
5. To serve spoon spinach puree into a bowl, layer in some rice, slice eggs in half place on top before drizzling over tahini and a little cracked pepper… win #ColorAlwaysWins
