This is definitely a Tuesday night situation. I get asked a lot for some gluten free recipes. Ones that are seriously cheap, easy and I stumbled upon a beautiful head of Cauliflower at the market to play with. Cauliflower to me is one of the most versatile ingredients. I have had my brothers in town for a week who are both vegetarian and as I wanted my steak fix I decided to please us both. I tell you what there is nothing more satisfying then biting down on that crunchy edge of ever slightly salty cauliflower. So much so that it should be illegal. Far from it, this dish is super healthy. Not to mention this weeks skill is all about learning how to make your own Hummus.

Cauliflower Steak with Homemade Hummus

Prep Time: 5 minutes

Cook Time: 5 minutes

Cost: $6-10

Skill: Easy

Health Facts: Cauliflower is a cancer fighting vegetable, it also has the added benefit of providing your body with Vitamin C and K both strong for the immune system, skin and supporting healthy digestion

Ingredients:

2 x 2 1/2cm (1 inch) thick cut Cauliflower Steaks

Cobram Estate Olive Oil

Pinch of salt

1 Can of Chickpeas, drained

1 clove of Garlic

1/2 Cup Tahini

Pinch of Paprika

Rocket/Arugula

Method:

  1. Add 2 Tbsp olive oil to a frypan on medium high heat, season both sides of cauliflower with salt and cook for 2-3 minutes or until golden brown and repeating on the other side for the same time. (If your Cauliflower is hard to the touch, stick it in a 200 degrees c 375F, oven for 7 minutes. Set aside.
  2. For the hummus, combine chickpeas, garlic, 1/4 Olive oil and Tahini in a blender and blitz until smooth
  3. To serve spread hummus on a board, top with cauliflower and finish with Arugula/Rocket
