Hey Friends! When I was in the Philippines I came across a street food that I just had to put my healthy spin on… and to make sure I was doing the right thing I invited Bogart along to taste πŸ™‚

I can’t tell you how much I enjoyed my time there. I am really looking forward to going back already as the best thing about the amazing place is the lovingness of the people πŸ™‚

Prep Time: 5 minutes

Cook Time: 7 Minutes

Cost: $2

Skill level: Easy (You have worked a frypan a couple of times)

Ingredients (makes 1)

1 Tbsp Olive Oil

1 Egg

1/2 Cup Coconut Milk

1/4 Cup Cheese (your favourite)

1/4 Cup Coconut, shredded/desiccated

Pinch of Salt

1/4 Cup Your favourite Greens, I love spinach πŸ™‚

Method:

  1. In a bowl whisk your egg
  2. Combine in your coconut milk, cheese, coconut and salt
  3. Heat a small frypan on medium heat and add the oil before pouring in the bater mix
  4. Allow to cook around the edges for 2 minutes before adding the greens and covering with aΒ  lid for a further 4 minutes to cook through (you can also put in the oven)
  5. Traditionally it is served with coconut on the side but you add whatever tastiness you desire
